Overview

A granulated unrefined sugar made by boiling down the sap of the Sri Lankan kithul palm (Caryota urens) until it crystallises, leaving soft caramel and toffee notes. Loose and free-flowing, it spoons into tea and coffee and substitutes for refined sugar in baking and desserts. Sold in retail jars and bulk sacks for specialty-food and food-service buyers.
